Low Carbohydrate Diet Recipes

Well, not so much recipes - more some suggestions of low carbohydrate meals you might like to try.

As ever, If you need more details on a particular dish, there are plenty of great cooks out there who can give you cooking times to the second and amounts to the gram and you'll find tons of great recipes on sites from our links page.

The secret to a successful low carb diet is to eat food that appeals in a reasonable quantity.

Think smaller portions of foods that you enjoy eating and changeing the way you prepare and cook your food.


Stuffed Mushrooms and Rocket

This is a quick and easy one to make. Just take a couple of large mushrooms and, after giving them a quick wash, put them cap down on a baking tray, brush with a little olive oil and sprinkle with salt and pepper to taste. Fill the underside of the caps with grated cheese (add chopped onion or garlic if you like and bake at gas 5 for about 20 minutes.

If you have the time, you can roast the mushrooms in the oven as above but for a quick fix simply zap the mushrooms in the microwave for a minute or two ( depending on wattage ), add the cheese then grill until the cheese melts.

Serve with rocket and a little dressing.

Rocket or Arugula has grown in popularity hugely over the past few years. Its crunchy green leaves are high in vitamins and add a delicious peppery taste to any dish.

Stuffed Peppers

While we're stuffing things, stuffed peppers are always a popular and easy dish to make.

Chop the top off a large pepper or halve it and cut out the seeds and inside bits. Take some tender beef such as sirloin and chop it up in the blender, add chopped onion, garlic, thyme, pepper or whatever else floats your boat and stuff it into the pepper.

Bake upright until the beef is cooked and the pepper is tender. ( Around an hour at gas mark 4 ). For extra taste, take the peppers out five or ten minutes before cooking time is up and top them with cheese.

Scrambled Eggs and Smoked Salmon

An easy one this - Just melt a knob of butter in a frying pan and heat. Break the eggs (2 per person) into a bowl and add black pepper to taste. Pour into the pan and heat while stirring. You can also add chopped onion and chives halfway through the cooking process if you like a little more bite.

Some people like their salmon cold in which case just serve it as it comes. If you prefer it warm cut the smoked salmon into small pieces and add to the egg as it starts to thicken.

You can also cook this easily in the microwave. The secret to stopping it going rubbery is to add a splash of milk to the eggs and cook in one minute or 30 second bursts, stirring vigorously with a fork between heating sessions.

Serve with Bucks Fizz for a special breakfast!
